"Fried Rice"

Another amazing imitation recipe. Well it's not exactly the same as your favorite chinese takeout, it comes pretty darn close. Healthy and delicious, it's as simple as that.
INGREDIENTS
2 to 3 cups of cauliflower “rice”
1 Tablespoon coconut oil
1/2 cup chopped carrots
1 tablespoon green onion, chopped
1 garlic clove, minced
1 to 2 eggs, as desired
Tamari (gluten-free soy sauce), to taste
Sea salt, to taste
*I love to add in extra vegetables to this as well. And what's great is you can really use whatever you like or happen to have! I have made this many times using what I have in my fridge at the time: broccoli, zucchini, tofu, onions, peas, etc.
**After much trial and error, I have discovered an easy way to make cauliflower rice:
-Chop up the cauliflower so it fits in your blender
-Fill the blender with water
-Blend the cauliflower until it becomes your desired consistancy (looks like rice)
-Pour the mixture into a strainer, leaving you with a batch of cauliflower rice!
DIRECTIONS
In a large skillet, saute the garlic in coconut oil, over medium heat. Add in the carrots and a splash of water to prevent sticking, and cook for 5 minutes, or until crisp-tender. Then add the green onion and egg, which will start to cook quickly.
Add in the cauliflower rice, along with a splash of tamari and salt. Stir to combine and heat through, about 3-5 minutes.
Adjust the seasonings to taste, then serve piping hot!
