Breakfasts for Egg-Haters

Yes, you heard me right: I don't like eggs. I honestly wish I did, but alas I do not and cannot seem to force myself to either. And unfortunately for me, I have found that eggs are pretty much a universal staple breakfast food, which makes going out for breakfast/brunch very difficult and not so enjoyable. I also found it hard to find healthy options that don't include eggs. It seemed like all I could find around me was things like french toast, pancakes and sugary cereal. But with a little effort and time, I have mastered the art of breakfast and found some great morning egg alternatives. Whether you like eggs or not, these are my healthy breakfast go-to's:

Avocado Toast

My absolute favorite breakfast...I pretty much have this everyday if not for breakfast, for a snack.

*I like to top mine with lemon & sea salt or Cholula hot sauce.

*Other toppings I've seen: red pepper flakes, chia seeds, tomato, goat or feta cheese.

*Below is the avocado toast from the restaurant Le Pain Quotidien.

Apples with Almond Butter & Cinnamon

*The two almond butter's I like to use are Justin's and MaraNantha

*Justin's is especially great, because they have 1.5oz squeeze packs: perfect for portion control and when you are on the go!

*Fun Facts:

-Apples have tons of fiber, leaving you satisfied and full.

-Almonds are a SUPERFOOD!

-Health benefits of cinnamon: anti-inflammatory, contains anti-inflammatory properties, protects heart health, fights diabetes, lowers cancer risk...and much more

Smoothies

There are endless, endless ways to make healthy and delicious smoothies, and I have found them to be a very filling way to start the morning.

*My morning smoothie usually consists of:

1 serving of protein powder (I like Jay Robb and Trader Joe's Brands)

a dash of cinnamon

chia and flax seeds

frozen strawberries and blueberries

spinach

coconut water

*Another smoothie I love is this Oatmeal Cookie Dough Smoothie by "Running with Spoons" (although I ommit the banana- another food I don't like! (And add some ice instead)
